Ingredients

  • 120 G unsalted butter
  • 140 G dark chocolate
  • 2 large egg plus
  • 2 egg yolks
  • 120 G light brown soft sugar,
  • 60 G plain flour
  • 100 G caramel or toffee sauce
  • 6 small pudding basins

Instructions

  • Preheat the oven to 200C/180C/Gas 6 Butter the inside of the pudding basins and line the base of each with backing pepper
    Put the butter and dark chocolate in a bowl over a pan of simmering water and wait for malt remove
    the bowl from the pan and cool to 15 mins
    Put the eggs, the yolk, and the sugar in a bowl beat with an electric whisk for 5 to 10 min until thick,
    Pale and fluffy.
    Gently fold in the chocolate mixture, then fold in the flour.
    Divided between the pudding basins then put on the heated baking tray and back for 12 mins.
    The top should be crisp but the center should still gooey.
    Put the basins on a wire rack and leave to cool.
    Scoop out the centers of the pudding, then place a ball of ice cream.
